    Answer : Kiritsuke is made of razor-thin edge and harnessed for its forever sharpness. It is ideal, especially for lean sliced meat or sashimi, and light chopping, but not for heavy use. Maybe you could have it sharpened to avoid the chips by the professional. Good Luck!
  • Question : Can this kiritsuke knife be treated as a typical chef knife? Can it cut any boneless meats and veggies or is a shun standard classic chef’s knife more suitable?
    Answer : This is THE chefs knife. I use this for all kitchen tasks. I would not attempt cutting into bone with this blade. Around bone or on poultry frames no problem. Not anything larger or heavier.

The Shun Cutlery Classic Kiritsuke Knife 8” is a versatile knife that can be used for all-around food preparation, including chopping, slicing, and rock motions. It has a maximum blade height of 2 inches, a double-sided blade and sharpened at 15 degrees angle. The knife is not full tang, only 3/4 of the length of grip similar to other Japanese manufacturers' chef's blade. It is essential to avoid hitting the plastic cutting board with the sharp edge to prevent chips. Some reviewers noted that the knife blade is fragile and overpriced, and it is prone to chipping even from light use. They suggested that customers can get a much higher quality hand-forged Japanese knife for the price that is of much higher quality. Nonetheless, other reviewers praised its quality, sharpness, balance, and usefulness. The knife is stunning, versatile, balances well and can be bought at a fair price. It doesn't come with a Sheath, the handle varies for each person, and it is heavier than most knives despite being thinner than others.
