It can as long as the oven does not get above the maximum temperature of the unit.

I live in Middle East Can we use it on 220 v?

It is battery operated, 2 AA 1.5 VDC.

You could, but it may take a bit of doing and the use of a small fan.

Will this work for an rtd pt100 temperature sensor?

No, the rtd pt 100 measures temperature as a function of a Platinum resistance probe. The Proster measures voltages originating from thermocouples.

Is there a way to disable the auto power-off?

Yes, hold down the HOLD button while you press the power button. Release it when the digital display shows the temperature readings. The hold icon at the top will be off. The setting defaults to on every time the device is powered on.
