I personally use the scary Sharp system. Once you have the inside polished it becomes easier. Use a small piece of wood with about the same sweep as the children to do the inside keep it flat don't put a bevel on this surface then apply some sandpaper to a flat surface to do the outside by moving the chisel side to side move up through the grints I stop at 1200 wet/dry using windex. Then strop the outside to a mirror finish. If you search scary Sharp on YouTube there are thousands of videos on how it's done.

Can I convert the micro bevel of my spoon gouge to true scandi?

Yes, I converted the edge to a true scandi. It works fine and cuts better.

Is this gouge suitable for hollowing out a wooden spoon?

Yes, this gouge is suitable for spoons, mugs, bowls, and such. This is the reason I bought one.
