Maybe some who like this stuff have never had real cheddar cheese. I have! I buy the blocks of cheddar. This stuff has no cheese flavor at all. It doesn't even taste like those cheese puffs someone else mentioned. I like the cheese puffs. IMHO, this has absolutely no flavor at all. Even the boxed off brand mac and cheese has better flavor than this stuff and that's not saying much.

After opening the cheese jar, do I need to refrigerate or what's the best way to store it?

Refrigeration causes way more clumping. I would just put it in a sealed jar (plastic lids never do as good of a job).

Is there any nutritional info on this? I.E. fat & sodium content, etc.

Serving size 15 g, Calorie 70, Fat 37 g, Cholest 8.67 g, Carbs 6.2 g, Sodium 541 g, and sugar 4.61g. The cheese is wonderful on popcorn, it also contains Vitamins A & C along with Iron and Calcium.

It depends on your sensitivity. It does say that it is made in the same facility as wheat products. My wife has a gluten intolerance (and her sister has celiacs...honestly, my wife probably does as well, but didn't want to go through all of the testing) and there is no WAY she's going to try this stuff...but I am =-)

Does this cheese contain rennet?

How do you use this when it gets into rock hard clumps? (About nine months from purchase date)

Not sure, mine hasn't hit that point yet but wondering if raw rice will work. I'm guessing clumping due to moisture & here when someone cell phone goes into water accidently they throw it into a bag of rice. We also throw rice into our saltshakers to keep it from clumping. Maybe wrapping some rice in a cheesecloth or something else that breathes will help?

I would like to make broccoli cheese soup. Can I use this product to make the soup?

I've tried, but it just doesn't have the same texture or flavor, unless you like a slightly watery cheese soup that tastes like mac and cheese. You can up the powder amount to make it thicker, but then it's too strong. Much better to use the real thing (and cheaper).

Anyone use this for nacho cheese sauce or a thicker sauce over veggies? How do you make it?

You want to make a rue with 1/2 cup flour and 1/4 stick of butter and 1/2 cup milk or water. Then add about two tablespoons of mix with 1 cup cheddar cheese and a little onion powder or garlic power and chili powder or pepper juice for taste and you're done.
