It can be used for low acid foods like meat and green beans and has a 10-pound and 15-pound weight to vent steam during the entire process. The canner can hold 4 wide-mouth quarts at once and regular mouth quart jars are also ideal for pressure canning. It does not hold 1/2-gallon jars but can hold 1/2 pint, pint, and quart jars. It is the same machine as the Carey DPC-9SS. Steam canning in the NESCO is an approved process using the same cycle times as water bath canning. The canner's height is 8'' high by 10.25'' diameter. It cools down before it lets you open it, so you can do multiple batches at once. The machine is easy and safe to use with clear and precise instructions for proper pressure canning. It replaces smaller melt-pots and is the best all-in-one product that is easy to use.
