I’ve rubbed them with Canola oil. It says to oil after each use.

It could because it is the same surface front and back but the front has the divots to catch liquids.

What are these boards pre-seasoned with?

I didn’t notice they were preseasoned. I always use mineral oil on mine.

How thick are these boards?

I don’t have the boards in front of me but I would say 1” to 1 ¼ “. A nice sturdy thickness.
