After 10 pounds of pressure is reached, canners report dropping the temperature down to level 5. When tightening the lid, customers found they are best served loosening all of the wingnuts first, then checking the level of the lid on the pot - this will likely require leveling out manually. The canner will not hold 1/2 gallon jars, so buyers would want to opt for the 21 Qt AA, which can hold up to 25 quarts. Buyers should monitor the pressure throughout the canning process to ensure it reaches optimal levels. Home made salsa can be safely and easily canned in this pressure cooker.
