Does this griddle from the versatop have a defuser-plate under it to prevent warping?

Griddle is steel and is designed with a diffuser, I have been using Camp Chef griddles for years on the pro 60 which is 30,000 btu each burner no issues with warping - however, you can buy a diffuser from camp chef as well (I sometimes use one with the grill box).

Does this come with a carrying case?

No, it doesn’t but wished it did. You can get a case for the griddle. I just love our camp chef and highly recommend it. Makes the best fajitas!

How does this hold up in high winds? I camp at Assateague Isle MD, super windy there.

We got to use ours in fairly heavy winds at Great Sand Dunes this past summer. It worked ok, but I would not want to do cook on it consistently in those kinds of conditions. The flattop heated pretty unevenly - hotter on the downwind half, obviously - and overall took a bit more fuel to get everything to temp than it would've on a no-wind day. I had mine set up where wind was blowing from right to left across the flattop; thinking back, rotating for a front-to-back wind might've helped slightly, but I didn't think about it at the time because it was working jussst enough to convince me to not put in any additional effort to move it.

It can get very hot but if you cook on low to medium it works to perfection. When we cook bacon and eggs we turn it off after bacon is cooked and then cook the egg

What are the real dimensions?

It's as advertised 18 x 7, worth getting I have no complaints. I can cook bacon and eggs at the same time.
