Answer : I would estimate maybe 0.3 grams at first and then use more if needed.

Answer : I have read online that some people do use it for that purpose.
Question : Do i boil the tofu flour to water then mix the coagulant or im wrong please explain
Answer : First you make your homemade soy milk from the soybeans. After you strain the soy milk, bring it back to around 180 degrees Fahrenheit and turn the burner off. Dissolve the tofu coagulant in some water and then mix the coagulant water into the hot soy milk.
Question : Which coagulant do u habe to use for the taho? I used half kilo of beans 3 liters watern and 1 tbs coagulant but my taho is sour.
Answer : GDL is good to use for taho. If it’s a little sour, too much GDL was used. Calcium sulfate works too but GDL will definitely make a smoother taho. You can try using a combination of both so that you can use less GDL but still get the smooth coagulation of the GDL.
Question : What is the ratio of the gdl and calcium sulfate? if 3g of gdl should be added, do I just add the cs on top of it, or the mix total is 3g?
Answer : If you want to use calcium+GDL, I would recommend trying a ratio of 2:1. 2 parts calcium to 1 part GDL. GDL on its own would work better as far as coagulation and the look and feel of the tofu but if too much GDL is used, it can leave a sour flavor, so that’s why we use it with Calcium. You really have to just try different ratios to see what you like best.
Question : Does this work with milks other than soy milk? Can I use dairy milk or coconut milk?
Answer : It does not work for milk other than soy milk.
Question : Does anyone else find this makes the tofu sour?
Answer : If too much is used, it is sour. One good method that we use at our factory is to mix GDL with Calcium Sulfate. The calcium sulfate helps the coagulation so that not too much GDL has to be used but the good effects of the GDL are still present, without the sourness.
Question : How fast does it gel up? I use 500 ml soy juice, with 5 grams protein in 100 ml (Eden Soy, unsweetened)

Question : How much gdl do you use for store-bought soy milk? A recipe would be very helpful. Thank you.
Answer : For 3-4 cups of hot soy milk mix 1/2-3/4 teaspoon of gdl and cover for 20-30 mins to set and then enjoy.
